Cauliflower Gnocchi with Sautéed Kale

Who knew cauliflower could be so trendy? If you haven’t tried Trader Joe’s cauliflower gnocchi yet, do yourself a favor and stock up on some (found in the freezer section) the next time you make a visit to the store. Just don’t prepare according to directions – it turns out mushy (trust me).




Trader Joe’s cauliflower gnocchi

Lacinato kale (or another dark, leafy green)

Olive oil

3 cloves smashed garlic


red pepper flakes



Heat olive oil on the stovetop on medium heat. Add the smashed garlic for about a minute to flavor the oil. Add torn or chopped kale and frozen gnocchi. Stir, to ensure the gnocchi browns evenly. Once the gnocchi looks browned and the kale has wilted, remove from heat and discard the smashed garlic cloves. Top with salt and pepper and red pepper flakes and enjoy.
