Pumpkin Chia Pudding
We’re not pretending that pumpkin chia pudding is a replacement for pumpkin pie. It is, however, a healthier way to get your pumpkin fix this season with a side of health benefits. Enjoy this mixture as a breakfast or snack this fall.
1 cup of pumpkin
1 ½ cups unsweetened almond milk (you could also use coconut milk or another nut milk)
¼ cup chia seeds
2 Tbsp maple syrup (I used a dash more because I like it on the sweeter side)
1 tsp vanilla powder
1 tsp pumpkin pie spice
Pinch of cinnamon and nutmeg
1 Tbsp cashew butter (or any nut butter; optional)
Add toppings of choice before serving: pumpkin seeds, nuts, granola, banana, dried fruit, coconut flakes, almond butter drizzle, etc.
Mix all ingredients in a bowl. Whisk together. Transfer mixture to an airtight container (or in 3 separate jars for individual servings) and refrigerate for at least 30 minutes or overnight. Add your toppings of choice before serving and enjoy!
*Note: you can add all ingredients to a blender before refrigerating for a creamier texture.
