Chocolate Chip Cookie Dough Bars - Done Healthy!

When people think of their favorite dessert, or a special treat that they could eat any day of the week, a lot of times it’s ice cream, freshly baked cookies, or a warm apple crumble. These Cookie Dough Bars are my go-to. It may be the addition of healthy fats like the coconut oil and almond butter, the protein and nutty flavor of the chickpeas, the satisfying and wholesome carbs from the oats, or maybe all of the dark chocolate chips I add! The only bad thing about the bars is that they don’t seem to last more than two days in my house!

·       1 can chickpeas or white beans (drained)

·       2 tsp pure vanilla extract

·       1/4 tsp salt

·       2 tbsp nut butter or allergy-friendly sub

·       2 tbsp coconut oil (or additional nut butter)

·       1/2 cup pure maple syrup, agave, or honey

·       1 1/2 cups rolled or quick oats

·       1/2 cup chocolate chips

*Favorites to use: Trader Joe’s creamy raw almond butter, Trader Joe’s maple agave blend, and dark chocolate chips



1.     Pulse oats in food processor or very strong blender, and transfer to large mixing bowl

2.     Blend chickpeas and add oats back into food processor

3.     Add all remaining ingredients except chocolate chips and blend until well combined

4.     Pour all ingredients into large mixing bowl and mix in chocolate chips

5.     Transfer mixture into an 8x8 dish, cover, and place in refrigerator or freezer

* A food processor would work best, but this can be done in sections in a strong blender
