It's Finally Fall - A Comfy Cozy Chili
2 lbs grass fed beef
14.5 oz can fire roasted tomatoes
1 large onion
6 oz can of tomato paste
3 tbsp of Chili Spice Mix (I use Chili 3000 from Penzey's)
3 cups water
Olive Oil (to brown onions)
Salt to taste
*Note, if you don't have a Chili spice mix, I LOVE the recipe from the Well Fed book, and you can use her spice recommendations.
1. Brown onions with olive oil and salt in a large stock pot.
2. Add beef and begin to brown. As meat starts to brown, add Chili spices and can of tomato paste.
3. Mix well! Once meat is mostly browned, add the canned tomatoes and water.
4. Simmer uncovered for at least 2 hours, ideally 3. Stir occasionally. Enjoy!
