Pumpkin Pie Chia Pudding

I love this recipe because it’s fast, easy, and delicious. It fills me up when I need a fast snack, and gives me a quick energy boost. This pudding tastes so much like pumpkin pie, you won’t believe it’s good for you! Bonus? My kids love it, too.

Ingredients:

1 cup pumpkin purée

1 cup canned coconut milk

½ cup almond milk

¼ cup chia seeds

2-3 T agave or maple syrup

½-1 tsp. Pumpkin pie spice

1 T vanilla extract

 

Directions:

Whisk pumpkin purée, canned coconut milk, and almond milk together until smooth.

Add remaining ingredients and mix well.

Cover and refrigerate overnight – chia seeds will plump and create pudding consistency by morning like magic!
